Sweet potatoes are one of the healthiest and least inflammatory foods out there! Plus they taste so good! A great way to get your family to eat healthy!
3 c. Peeled/Shredded Sweet Potatoes
1/2 c. T.G.I.G.F! Baking Mix
2 lg. Eggs, beaten
2 T. Milk - cow's, almond, coconut or rice
1 T. Granulated Sugar
1 T. Brown Sugar
1 t. Aluminum-free baking powder
1/2 t. Cinnamon
3-4 T. Olive, coconut or palm oil
*You can also use coconut palm sugar or maple sugar as substitutes for the granulated and brown sugar.
Wash, peel and shred 2 medium sweet potatoes. I used a Y shaped peeler along with my shredding disc in my food processor to prepare the sweet potatoes. In a medium mixing bowl combine shredded sweet potatoes with T.G.I.G.F! mix, eggs, milk, granulated sugar, brown sugar, baking powder and cinnamon. In a large skillet heat1-2 T. oil over medium heat, add more as needed. Make sure to heat oil over medium heat only so that the sweet potato gets soft and cooks through without burning. Drop the sweet potato fritter batter by the spoonful into heated oil and allow to brown slowly. Drain on paper towels. Repeat until batter is gone.
