I am always trying to perfect a soft and delicious roll recipe. I have to say this one is my all time favorite. The recipe is an adaptation of my perfect pizza crust with the addition of ghee, organic herbs and the ever important 30 minute rise time. I like my rolls a little smaller, but feel free to make them as large as you want. Note the larger they are the less rolls the batter will make. They are so, so soft and the perfect roll for any filling you desire.
1 1/4 c. T.G.I.G.F! Mix
1 pkg Active dry yeast
2 t. Organic Dried herbs of your choice, I use
an All-Purpose Blend
1/2 t. Onion Powder
1/2 t. Salt
3/4 c. Warm water - 110 degrees
1 T. Organic Ghee or Oil + 1 t. for fingertips
1 t. Organic Honey
Preheat oven to 375 degrees. Melt ghee, set aside to cool. Lightly grease a roll pan, I purchased mine from King Arthur. In a large mixing bowl add T.G.I.G.F!, package of yeast, herbs, onion powder and salt. Stir together to incorporate. In a small bowl combine the warm water, 1 T. of ghee, and honey stir. Pour wet ingredients into dry ingredients. Using a mixer beat batter on high for 2 minutes. Measure out 1/4 cup of the batter and place in lightly greased roll pan, repeat until all cups are filled. Using the additional 1 tsp. of melted ghee, coat fingertips to press dough so that it covers the bottom of each cup completely. Cover and allow to rise in a warm area for 30 minutes. Once risen, place into 375 degree preheated oven and bake for 15-17 minutes until a light golden brown. These keep beautifully in the freezer, I cut the rolls in half, wrap with plastic wrap, and place in a heavy duty freezer bag. When ready to eat, thaw on counter or microwave 20-25 seconds. Enjoy!
