The perfect party food, great served with a garlic mayo dipping sauce!

Shrimp/Ham

1 c.           Raw Medium Shrimp(about 17)

                 peeled/de-veined & cut into small pieces

1/2 c.        Pancetta ham cut into small pieces

1 t.            Olive oil

Dough:

1 1/2 c.     T.G.I.G.F! Baking Mix

1 1/2 t.      Baking Powder

1/2 t.         Baking Soda

3/4 t.         Old Bay

1/2 t.         Salt

2 T.           Cold Butter, cut into small pieces

1 t.            Frank's Red Hot Sauce

2 t.            Butter, melted & cooled

1/2 c.        Sharp Cheddar Cheese, shredded

1/2 c.        Sweet Corn, drained

1/2 c.        Half & Half

Garlic Mayo Dipping Sauce

1/2 c.        Mayonnaise - I use Hellman's

2 t.            Frank's Red Hot Sauce or more to taste

1/8 t.         Garlic Powder

1/8 t.         Black Pepper

Preheat oven to 400 degrees. Heat oil over medium heat in a small skillet, add shrimp and ham, brown. Once browned drain on paper towel lined plate.  Allow to cool while preparing other ingredients.

In a large bowl combine all dry dough ingredients, stir to combine. Using a pastry blender cut in cold butter pieces until  coarse crumbs form. Pour in Frank's and cooled melted butter, sharp cheddar cheese, corn, half & half and cooled shrimp and ham. Mix until just combined-do not overmix. Lightly coat a mini muffin pan with oil, using a small scoop place dough into mini muffin pan. Bake 13-15 minutes in 400 degree oven until lightly browned. 

To prepare the garlic mayo dipping sauce add all ingredients in a small mixing bowl and stir until thoroughly mixed.  Store in the refrigerator until ready to use.
