Absolute comfort in a bread! It tastes like your favorite stuffing in a quick bread. You can use the batter to make a delicious biscuit topped chicken pot pie or bake it and cut into cubes for stuffing. It's also great toasted with a pat of butter spread on top. This is a must try!
2 Diced onions, caramelized
1 T. Organic butter or Ghee
3/4 c. Sour cream
1/2 c. Olive Oil or Coconut oil, melted and cooled
2 lg. Eggs
1 3/4 c. T.G.I.G.F! Baking Mix
1/2 c. Grated Parmesan Cheese
1 T. Sugar
2 t. Ground Thyme
2 t. Chopped Rosemary
1 1/2 t. Baking Powder
1 t. Lemon zest
1/2 t. Salt
1/4 t. Pepper
1/4 t. Baking Soda
Preheat oven to 350 degrees. Grease a 9" x 5" loaf pan. In a saute pan caramelize 2 diced onions in 1 T. organic butter or ghee over medium heat, about 30 minutes until deliciously tender and golden brown. In a small bowl stir together the sour cream, oil and eggs. In a large mixing bowl stir together, T.G.I.G.F! Mix, Parmesan cheese, sugar, thyme, rosemary, baking powder, lemon zest, salt, pepper and baking soda. Gently stir the wet ingredients and caramelized onions into the dry ingredients until fully blended. Pour batter into greased 9" x 5" loaf pan. Bake for 40-50 minutes until golden brown. Enjoy!
