This a delicious breakfast or brunch recipe that feeds a crowd. Our T.G.I.G.F! baked bread works beautifully in this recipe. You can also prepare the casserole the night before and bake it the next morning. The abundance of fresh eggs laid by our hens make this recipe a keeper in our home!
12 lg. Eggs
2 1/4 c. Milk
1/2 t. Salt
1 pd. Sausage, cooked and drained
I used spicy turkey
2 c. T.G.I.G.F! bread cut into cubes
1 1/4 c. Shredded cheddar cheese
1/2 c. Shredded mexican cheese
Preheat oven to 350 degrees. In a medium frying pan brown the sausage, drain and set aside. In a large bowl whisk together the eggs, milk and salt. Stir the sausage, T.G.I.G.F! bread cubes and cheese into the eggs. Pour the mixture into a 13" x 9" greased baking dish. Place casserole into 350 degree preheated oven and bake 35-45 minutes.
*If you would like to prepare the casserole the night before that works too! Simply assemble the casserole, cover with plastic wrap and place in the refrigerator for 8 hours. When ready to bake: remove from refrigerator, allow to sit out while oven is preheating to 350 degrees, then bake for 35-45 minutes.
