1/2 c.        Butter, softened

1 c.           Sugar

1 lg.          Egg

1 t.            Vanilla extract - I use Spice Islands

2 1/2 c.     T.G.I.G.F! Baking Mix

2 t.            Baking powder

1/4 t.         Salt

Preheat oven to 375 degrees. In a large mixing bowl beat butter until creamy, add the sugar and mix well. Add the egg and vanilla, blend well on medium speed. In a medium bowl combine T.G.I.G.F! Mix, baking powder, and salt, stir to combine. Slowly add the dry ingredients to the wet ingredients and blend on medium until fully combined. Shape the dough into a ball with hands, cover and refrigerate for 1 hour. Lay a sheet of parchment paper the size of your cookie sheet on the counter, in one section place a small piece of dough, lay wax paper on top of dough and roll the dough to about 1/8" thickness. Cut with desired cookie cutter, remove excess dough. Repeat this until parchment paper is full, leaving space between cookies. Place parchment filled paper on cookie sheet, sprinkle with colored sugar if using. Bake in preheated 375 degree oven for 6-9 minutes until just lightly browned on edges of cookies. Cool for 5 minutes in pan then transfer to a wire rack. Ice cookies if desired.
