These cookies melt in your mouth! They are the perfect combination of a moist muffin with a cookie. The perfect fall time treat.

1 c.           Butter, softened

1/2 c.        Sugar

1/2 c.        Brown Sugar

1 c.           Organic canned pumpkin

1 lg.          Egg

1 t.            Vanilla extract - I use Spice Islands

2 c.           T.G.I.G.F! Mix

1 t.            Baking soda

1 t.            Baking powder

3/4 t.         Cinnamon

3/4 t.         Unsalted nuts, if desired

Powdered sugar for dusting


Preheat oven to 350 degrees. In a large mixing bowl beat together butter and sugars until light and fluffy. Add pumpkin, egg and vanilla. In a small bowl stir together T.G.I.G.F!, baking soda, baking powder and cinnamon. Slowly add dry ingredients to wet ingredients and mix until fully blended. Add nuts if desired. Using a scoop place dough on parchment lined cookie sheet. Bake in preheated 350 degree oven for 10-14 minutes, do not over bake. Sprinkle with powdered sugar.
