The perfect flavor combination of chocolate and peanut butter in a soft delicious cookie. If you can't have peanut butter, Sunbutter will work as well!
6 T. Butter, softened
6 T. Sugar
1/4 c. Brown Sugar
1 lg. Egg
6 T. Peanut Butter - I use Earth Balance
1/2 t. Vanilla extract - I use Spice Islands
1 1/2 c. T.G.I.G.F! Mix
1/2 t. Baking soda
1/4 t. Salt
1/2 c. Dark chocolate chips
Preheat oven to 350 degrees. In a large mixing bowl cream together on medium speed the butter, sugar and brown sugar until light and fluffy. Add the egg, peanut butter and vanilla, blend well on medium speed. In a medium bowl combine T.G.I.G.F! Mix, baking soda, and salt, stir to combine. Slowly add the dry ingredients to the wet ingredients and blend on medium until fully combined. Mix in dark chocolate chips on low. Using a small scoop, scoop out dough and place dough balls on a parchment lined cookie sheet. Bake in a 350 degree preheated oven for 7-10 minutes. We like them soft, so ours cook about 7 - 8 minutes, if you prefer a crispier cookie bake them longer.
