Crust

1 c.             T.G.I.G.F! Baking Mix

1 c.             Certified Gluten-Free Oats

3/4 c.          Organic Brown Sugar

1/2 t.           Aluminum -free Baking Powder

1/2 c+2 T.   Organic Unsalted Butter

Filling

3                 Medium Peaches, peeled and diced

1 1/2 T.       T.G.I.G.F! Baking Mix

1 1/2 T.       Organic Brown Sugar

1 1/2 T.       Certified Gluten-Free Oats

1 T.             Organic Unsalted Butter, melted

Dash of Cinnamon

Peach crisp

One 8" x 8" or three 2 1/2" x 5"

Preheat oven to 350 degrees. In a large mixing bowl using a spoon or spatula, stir together crust ingredients until they come together when pinched with your fingers. In another large mixing bowl stir together peaches, T.G.I.G.F! Baking Mix, organic brown sugar, gluten-free oats, organic unsalted butter and dash of cinnamon. Press crust ingredients in bottom and up the sides in a 8" x 8" baking dish or 3 mini loaf pans. Spoon the filling evenly over the crust(s). Bake in preheated 350 degree oven for 25-30 minutes until light golden brown. Serve warm with a scoop of vanilla ice cream.
