Great way to start the day! The perfect pancake recipe!

1 1/2 c.     T.G.I.G.F! Mix

3 t.            Baking Powder

1/8 t.         Salt

1 lg.          Egg, beaten

1 1/4 c.     Milk, cow's, rice, almond, soy or coconut

1/4 c.        Oil, olive, coconut(melted&cooled) or canola

1-3 T.        Water, add to achieve desired consistency

1/2 t.         Vanilla - Spice Islands


In a small mixing bowl combine all dry ingredients, stir with a spoon to combine. In a large mixing bowl whisk together the egg, milk, oil and vanilla.  Slowly add dry ingredients to wet and stir until fully blended. Allow batter to rest 5 minutes to thicken. Add 1-3 T. water, one tablespoon at a time, to achieve desired consistency. Pour batter by the spoonful into a preheated skillet and cook for 2-3 minutes per side until golden brown. Store any leftover pancakes in a freezer safe bag. When ready to eat simply toast or microwave, making them an awesome quick breakfast for those busy weekday mornings.
