Delicious pan fried fish is an Eastern Shore favorite! T.G.I.G.F! along with a few spices of your choice makes this meal irresistible.


4              Fresh Fish Filets: Flounder, Trout, Rockfish,                   Tilapia or fish of your choice

1 c.           T.G.I.G.F! Baking and Bread Mix

1-2 T.        Old Bay, J.O., cajun, OR lemon pepper                          seasoning - your choice

Olive oil

Lemon juice, if desired

Check each filet carefully for bones and remove if any are found. Rinse each filet and pat dry with a paper towel and set aside on a plate. Pour T.G.I.G.F! into a large plate along with the spice of your choice, stir to incorporate spice with T.G.I.G.F!. Lay one at a time each filet into T.G.I.G.F! mixture and coat on both sides, transfer to another large plate, repeat until all filets are coated. Place a large cast iron skillet on the stove and pour enough olive oil to coat the bottom of pan, turn to medium heat. Once the oil is heated lay coated filets in hot oil and cook 5-6 minutes per side, repeat until all filets are cooked. Fish is done when the filet flakes when touched with a fork. You may have to add more oil as needed. Transfer cooked filets to a wire rack to cool. Serve with fresh squeezed lemon juice, if desired. Enjoy!


*Frozen fish filets can be used, simply thaw in cold water and follow the directions above.
