I used the Soft and Delicious Roll recipe as the base for these awesome open faced cheeseburger melts. You can use any meat or vegetable filling with absolutely delicious results. Try salsa with cheddar cheese for a Mexican style melt. Try roasted vegetables with any cheese of your choice for a vegetarian melt.  Try pizza sauce, pepperoni and mozzarella for an Italian  melt.The possibilities are endless. Kids love to make their own creations, a great way to get them to eat veggies hidden inside!

1 1/4 c.     T.G.I.G.F! Baking Mix

1 pkg        Active dry yeast

2 t.           Organic Dried herbs of your choice, I use

                an All-Purpose Blend

1/2 t.        Onion Powder

1/2 t.        Salt

3/4 c.        Warm water - 110 degrees

1 T.           Organic Ghee + 1 t. for fingertips

1 t.            Organic Honey

1 Pd.         Lean Ground meat, Browned

                  we use Venison

2 c.            Shredded Cheddar or cheese of your choice

1 c.            Onions, sauteed in ghee

1 c.            Peppers, sauteed in ghee

                  Sweet pepper or jalapenos or both work great


Preheat oven to 375 degrees. Melt ghee, set aside to cool. Lightly grease a roll pan, I purchased mine from King Arthur. In a large mixing bowl add T.G.I.G.F!, package of yeast, herbs, onion powder and salt. Stir together to incorporate. In a small bowl combine the warm water, 1 T. of ghee, and honey stir. Pour wet ingredients into dry ingredients. Using a mixer beat batter on high for 2 minutes. Measure out 1/4 cup of the batter and place in lightly greased cups of roll pan, repeat until all cups are filled. Using the additional 1 tsp. of melted ghee, coat fingertips to press dough so that it covers the bottom completely and 1/2 way of the sides of each cup. Cover and allow to rise in a warm area for 30 minutes. While dough is rising brown lean ground meat and drain. Saute vegetables of your choice in ghee. Once risen, fill with your cooked ingredients, top with cheese, if desired. Place into 375 degree preheated oven and bake for 15-17 minutes until light golden brown on edges.  Allow to cool slightly, remove from pan and enjoy!
