These are like my grandmother's baking powder biscuits only now they are gluten-free! Yay! My favorite way to eat them is right out of the oven with butter and honey. They are also wonderful as a biscuit topping for chicken pot pie! Feel free to double the recipe.
1 c. T.G.I.G.F! Mix
1/2 c. Milk of choice
3 T . Unsalted butter, chilled and cut into pieces
1 1/2 t. Baking Powder
1/2 t. Salt
Preheat oven to 425 degrees. In a large mixing bowl add T.G.I.G.F! Mix, baking powder and salt. Using a fork or pastry blender cut butter into dry ingredients until a coarse crumb forms. Add milk 1 tablespoon at a time until dough leaves sides of the bowl and comes together. Do not overwork the dough.,Using fingers pinch off enough dough to make a 2" circle. Slightly flatten dough into a disc, the biscuits don't rise a lot so don't flatten too much. If you like you can spread dough to about 1/2" thickness onto a piece of wax paper and use a 2" biscuit cutter to cut out your biscuits. Place biscuits on an ungreased cookie sheet and bake 8-12 minutes until edges are slightly golden, making sure the bottoms don't burn.
