Preheat oven to 340 degrees. In a large mixing bowl cream together on medium speed the butter, sugar and brown sugar until light and fluffy. Add the egg and vanilla, blend well on medium speed. Add certified gluten-free rolled oats, T.G.I.G.F!, cinnamon, baking soda and salt, mix well. If using, stir in raisins, chocolate chips and nuts. Using a scoop, scoop out dough and place dough balls on a parchment lined cookie sheet. Bake in a 340 degree preheated oven for 7-10 minutes. We like them soft, so ours cook about 9 minutes, if you prefer a crispier cookie bake them longer.
Delicious soft and chewy oatmeal cookies. So easy to make. If raisins are your thing, simply omit. We like them plain, with raisins, and with chocolate chips or nuts.
1/2 c. Butter, softened
1/2 c. Brown Sugar
1/4 c. Sugar
1 lg. Egg
2 t. Vanilla extract - I use Spice Islands
1 1/2 c. Certified Gluten-Free Rolled Oats
3/4 c. T.G.I.G.F! Baking and Bread Mix
1/2 t. Cinnamon
1/2 t. Baking soda
1/4 t. Salt
1/2 c. Raisins or Chocolate Chips, if desired
1/2 c. Chopped nuts, if desired
