LIGHT AND CRISPY FRIED SHRIMP

3-4 SERVINGS

Delicious light and crispy fried shrimp. This recipe calls for 16/20 jumbo shrimp but any size will work. We use fresh local shrimp that are not peeled or deveined but many stores offer peeled and deveined shrimp if fresh aren't available.


1 pd.        16/20 count jumbo shrimp

1 c.           T.G.I.G.F! Mix

1-2 T.        Old Bay or J.O. Seasoning

1 t.            Cayenne Pepper, if desired

The first step is to peel and devein shrimp. Using kitchen shears or a sharp knife cut a slit along the top of each shrimp taking care to not cut all the way through. Remove the shell and  the vein that is along the slit, rinse shrimp. Lay rinsed peeled and deveined shrimp in a shallow bowl. Preheat deep fryer or oil in a deep saucepan to 350 degrees. Once all shrimp are peeled and cleaned sprinkle with seasoning and cayenne if using. Place T.G.I.G.F! on a plate. One at a time coat each shrimp in T.G.I.G.F! set aside on another plate and repeat until all are coated. Drop coated shrimp into preheated oil, do not overcrowd, fry 2-3 minutes until light golden brown. Serve with cocktail sauce.  Enjoy!
