This recipe makes delicious light and airy waffles or can be used to make baked donuts.
1 1/2 c. T.G.I.G.F! Mix
3 t. Aluminum-free Baking Powder
1/8 t. Sea Salt
1 lg. Egg, beaten
1 1/4 c. Milk, cow's, coconut, rice, almond or soy
1/4 c. Oil, olive, canola, coconut(melted&cooled)
1/2 t. Vanilla extract
In a small bowl mix together the dry ingredients, set aside. In a large bowl whisk together the egg, milk, oil and vanilla extract. Slowly add the dry ingredients to the wet ingredients. Stir until fully blended. Allow to sit 5 minutes to thicken. Pour batter onto preheated waffle iron, cook until golden brown. I used a counter-top electric mini donut maker to make wonderful cinnamon sugar donuts.
