This is my beautiful Hannah's recipe that we can't get enough of. A delicious way to get the kids to eat their veggies.
1 lg. Zucchini, sliced
1/2 c. T.G.I.G.F! Mix
1/2 c. Milk, cow's, almond, rice, soy or coconut
Hannah's uses almond milk.
2-3 T. Olive oil
Old Bay Seasoning
Curry Powder
Slice the zucchini in uniform 1/8" thick slices using a sharp knife or mandolin slicer. Pour milk and T.G.I.G.F! Baking and Bread Mix into separate small bowls. Dip each zucchini slice into the milk then into the T.G.I.G.F! Baking and Bread Mix. Lay slices on a plate, repeat until all slices are coated. Pour enough oil to coat the bottom of a large frying pan or electric skillet and heat on medium heat. Add zucchini chips in a single layer, taking care to not overcrowd the pan. Using a small spatula turn each zucchini chip over when golden brown. Once browned on both sides place on a cookie sheet lined with paper towels. While still warm sprinkle the chips with Old Bay and Curry Powder or whatever spices you choose.
