This recipe gives you a decadent fudge like brownie that has a mild mint ribbon topping! These are always a hit at parties and great to give as gifts!
Brownies
1 c. Unsalted butter
4 oz. Unsweetened chocolate
2 c. Granulated sugar
2 t. Vanilla - I use Spice Islands
4 lg. Eggs
1 1/4 c. T.G.I.G.F! Mix
Mint Topping
1 8oz. Cream Cheese, softened
1/4 c. Granulated sugar
1 lg. Egg
1/4-1/2 t. Mint extract * Use the amount to your taste.
Preheat oven to 350 degrees. Grease an 11" x 13" pan. In a small mixing bowl cream together the topping ingredients until fully blended and smooth, set aside. In a large saucepan melt together the butter and chocolate over low heat, stirring constantly. Stir in the sugar and vanilla. Remove from heat and allow to cool 5 minutes. Using a handheld mixer blend in eggs one at a time until fully incorporated. Add T.G.I.G.F! and mix well. Pour brownie batter into pan and spread evenly. Using a spoon, place dollops of topping over batter. Take a knife and create swirls of the mint topping over the brownie batter by running the knife vertically and horizontally through the topping and batter - taking care to not mix the topping completely into batter. Bake in a preheated 350 degree oven 35-45 minutes until set. Allow to cool at least 20 minutes before slicing.
