This has to be the absolute best coffee cake! It is moist and delicious with a buttery brown sugar crumb topping!


3 oz.         Cream cheese, softened

1/3 c.        Butter, softened

1 1/4 c.     T.G.I.G.F! Mix

2/3 c.        Granulated sugar

1 t.            Aluminum -free Baking Powder

1/4 t.         Baking soda

1/4 t.         Salt

1/4 t.         Cinnamon

1 lg.          Egg

1/4 c.        Milk, cow's, rice, soy, almond or coconut

3/4 t.         Vanilla extract


1/4 c.        Brown Sugar, firmly packed

1/4 c         T.G.I.G.F! Mix

1 T.           Butter, softened    


Preheat oven to 350 degrees. Grease an 8" or 9" circular pan. THIS RECIPE DOES BEST WHEN A CIRCULAR PAN IS USED. In a large bowl cream butter and cream cheese. Add the remaining cake ingredients and mix on medium until fully blended. Spread batter into greased circular pan. In a small bowl combine topping ingredients and mix together with a fork or fingers until a coarse crumb forms. Sprinkle the topping evenly over batter. Bake in a preheated 350 degree oven for 35 minutes until toothpick inserted comes out clean. If the center of the cake does not rise as high as the sides, don't worry it will not alter the incredible taste of this moist delicious coffee cake.
