These are truly the best gluten-free chocolate chip cookies! They are buttery goodness that melt in your mouth. If you like your cookies a little more crisp, just bake a little longer.

6 T.           Butter, softened

1/2 c.        Sugar

1/4 c.        Brown Sugar

1 lg.          Egg

1/2 t.         Vanilla extract - I use Spice Islands

1 1/2 c.     T.G.I.G.F! Baking Mix

1/2 t.         Baking soda

1/4 t.         Salt

1/2 c.        Chocolate chips


Preheat oven to 340 degrees. In a large mixing bowl cream together on medium speed the butter, sugar and brown sugar until light and fluffy. Add the egg and vanilla, blend well on medium speed. In a medium bowl combine T.G.I.G.F! Mix, baking soda, and salt, stir to combine. Slowly add the dry ingredients to the wet ingredients and blend on medium until fully combined. Mix in chocolate chips on low. Using a small scoop, scoop out dough and place dough balls on a parchment lined cookie sheet. Bake in a 350 degree preheated oven for 7-10 minutes.  We like them soft, so ours cook about 7 - 8  minutes, if you prefer a crispier cookie bake them longer.
