This cake is absolutely delicious. It took me a little while to get it just right but I couldn't be happier with the results! This recipe makes one 8"- 9" round cake and can be doubled if needed. This cake is the closest I have found to the devil's food cake I used to love.  It is moist, fudgey and decadent. It makes a great birthday cake!


1 c.+ 2 T.  T.G.I.G.F! Baking Mix

1/2 c.        Unsweetened Cocoa Powder

1 c.           Sugar

2 t.            Baking Soda

1/2 t.         Salt

5 T.           Olive Oil

1 T.           Cider Vinegar

1 t.            Vanilla Extract - I use Spice Island

1 lg.          Egg

3/4 c.        Water

Preheat oven to 350 degrees. In a large mixing combine all dry ingredients, stir with a spoon to combine. In a medium bowl whisk together all wet ingredients. Pour wet ingredients into dry ingredients and stir with a whisk until fully combined. Pour batter into a well-greased 8" or 9" round cake pan.  Make sure to grease the pan really well! Bake for 30-35 minutes in preheated 350 degree oven until batter is completely set and toothpick inserted comes out clean. Allow to cool completely in pan on wire rack before removing to a plate. Place cake in refrigerator once cooled and chill for at least 30 minutes before icing. You can also use this recipe to make cupcakes you will just have to adjust the baking times.
