A delicious sweet and savory pizza! Our perfect pizza crust works beautifully in this recipe! Simply use leftover chicken with a few additional ingredients for a quick and delicious meal!


1 1/4 c.     T.G.I.G.F! Mix

1/2 t.         Sugar

1/2 t.         Onion Powder

1/2 t.         Southwest seasoning

1/2 t.         Garlic Powder

1- 7 g.       Active dry yeast packet

3/4 c.        Warm water - 110 degrees

1 T.           Olive oil

Topping:

1 1/2 c.     Cooked chicken, diced

1 c.           Pineapple, diced and drained

1 c.           Onion, sliced

Sliced Provolone Cheese

2 c.           Shredded Cheddar & Mozzarella cheese

                 blend

1/2 c.        BBQ sauce - we like honey chipotle

Preheat oven to 200 degrees. Line an 11" x 15" cookie sheet with parchment paper. In a large mixing bowl stir together T.G.I.G.F! mix, sugar, onion powder, southwest seasoning, garlic powder and active dry yeast. Pour 3/4 cup of warm water along with olive oil over dry ingredients and mix on medium high for 2 minutes. Dough will be thick. Using a rubber spatula spread the dough onto the parchment lined pan. Place dough into preheated 200 degree oven and turn oven off. Allow dough to rise 30 minutes then remove from oven. Turn oven back on to 400 degrees. While oven is preheating place a layer of sliced provolone cheese first, then add BBQ sauce, chicken, pineapple, onion and shredded cheddar and mozzarella cheese. The layer of provolone cheese prevents the crust from becoming soggy. Bake for 20-25 minutes until edges and bottom are light golden brown.
