This is one of my family's and day care children's favorite recipes! The bread is so moist and delicious! It keeps really well in the refrigerator and is so good warmed or toasted for breakfast or a snack.
2 lg. Eggs
1 c. Mashed ripe bananas, about 2 medium
3/4 c. Sugar
1/3 c. Oil of choice
1/3 c. Milk of choice
1 3/4 c. T.G.I.G.F! Baking Mix
3/4 t. Baking soda
3/4 t. Baking powder
1/2 t. Salt
1/2 c. Mini chocolate chips, if desired
1/2 c. Walnuts or pecans, if desired
Preheat oven to 350 degrees. Grease bottom only of a 9" x 5" loaf pan or two 8" x 4" loaf pans. In a large mixing bowl add all wet ingredients, mix well on medium speed. In a small bowl combine T.G.I.G.F! Mix with baking soda, baking powder and salt. Slowly add dry ingredients to wet and mix until fully blended on medium. Pour in chocolate chips and nuts if using and mix on low until incorporated. Bake for 45-55 minutes until golden brown. Store wrapped in refrigerator, warm or toast when ready to eat if desired. If you make the two 8" loaves you can wrap and freeze one to enjoy later.
