A delicious fall breakfast when apples are plentiful. Also great served as a dessert, top a warm pancake with a scoop of vanilla ice cream and sprinkle with cinnamon sugar! Heaven!
1 1/2 c. T.G.I.G.F! Mix
2 T. Brown Sugar
1 T. Granulated Sugar
3 t. Aluminum -free Baking Powder
1/2 t. Cinnamon
1 1/4 c. Milk - cow's, almond, rice or soy
1/4 c. Oil
1/2 t. Vanilla extract - Spice Island
1/2 c. Apples, diced
In a small bowl combine all dry ingredients, stir together. In a large mixing bowl whisk together milk, oil, and vanilla. Slowly add dry ingredients to wet ingredients stir until well blended. Stir in apples. Coat a large skillet with a little bit of oil and heat on medium. Spoon batter into heated skillet and cook for 3-5 minutes until golden brown on each side. Serve with cinnamon sugar or as a dessert with vanilla ice cream. Store any leftover in a freezer safe bag and simply microwave or toast when ready to eat.
