allergy friendly soft & delicious rolls

make 6 rolls


Preheat oven to 375 degrees. Lightly grease a roll pan, I purchased mine from King Arthur. In a large mixing bowl add T.G.I.G.F!, package of yeast,herbs(if using) sugar and salt. Stir together to incorporate. Add warm water and olive oil. Using a mixer beat batter on high for 2 minutes. Measure out 1/4 cup of the batter and place in lightly greased roll pan, repeat until all cups are filled. Using the additional 1 tsp. of olive oil, coat fingertips to press dough so that it covers the bottom of each cup completely. Cover and allow to rise in a warm area for 30 minutes. Once risen, place into 375 degree preheated oven and bake for 15-17 minutes until a light golden brown.  These keep beautifully in the freezer, I cut the rolls in half, wrap with plastic wrap, and place in a heavy duty freezer bag. When ready to eat, thaw on counter or microwave 20-25 seconds. Enjoy!

This is a version of our soft & delicious rolls recipe using olive oil instead of ghee. If you can't have olive oil simply replace with an oil that fits your dietary needs. The herbs add flavor and are optional.  I make these without seasoning so I can use them for both savory and sweet recipes.They are truly soft and delicious, no crumbling here!

2 1/2 c.     T.G.I.G.F! Mix

1 pkg        Active dry yeast

3 t.           Organic Dried herbs of your choice, I use

                an All-Purpose Blend, Optional

2 t.           Organic Sugar

1/2 t.        Salt

1 1/2 c.     Warm water - 110 degrees

2 T.           Olive Oil + 1 t. for fingertips
